A TASTE OF GARO CULTURE
Garo Flavours, Grown Close to Home
Warm ginger, earthy turmeric, tender pork and fresh garden vegetables: Garo cooking brings distinct flavours to the table. Locally grown organic vegetables and herbs gathered fresh from the forest connect our food to the land around Nalikhali and the knowledge of our cooks. All our Garo meals are served with rice, with varieties ranging from light, fluffy grains to richly coloured, chewy red sticky rice. Many traditional dishes are gently simmered with little added oil, drawing their flavour from the ingredients themselves.
One distinctive ingredient is kalchi, traditionally made by filtering water through plant ash, often from dried banana stems. It softens ingredients and gives certain dishes their unmistakable character.
At Nalikhali, chilli comes separately, so you choose the heat. Traditional rice wine brings a taste of Garo hospitality and celebration. Everything invites you to slow down, share a meal and discover the people behind the food.

Slow-Cooked Wak Bokma, Finished on the Open Flames
Our weekly signature supper at Didi’s Kitchen.
Slow-cooked with ginger, garlic and locally grown organic vegetables, our pork belly is tender, rich and full of flavour. Kalchi, the banana-stem ash water used in Garo cooking, helps soften the meat before a final turn over the fire gives it a smoky, caramelised edge.
In Garo tradition, we serve it with locally grown rice, bringing the harvest of the surrounding fields to the table. This is a generous supper made for sharing. Settle in beside the fire, take another slice and make an evening of it.
Alu Gajor Jalik
Potato and Carrot Curry with Chilli
Tender potatoes, sweet carrots and the warmth of chilli come together in this colourful, comforting curry. The potatoes soak up the cooking juices, while the carrots bring a gentle sweetness that balances the heat. Served with rice, it is a generous, satisfying vegetable dish, with our separate chilli condiment for those who enjoy an extra kick.

Do'o Goppa
Chicken Steamed with vegetables in banana leaf
Unwrap the banana leaf to discover chicken nestled among generous layers of onion and vegetables. The onions bring sweetness, the vegetables add texture, and the savoury juices are a pleasure to spoon over rice. Served in its leaf wrapping, Chicken Goppa offers an inviting taste of the Garo kitchen. Add our separate chilli condiment to find your preferred warmth, then settle in and enjoy.
“Banana leaves are part of the cooking itself. Research has found that food steamed inside them develops higher measured phenolic content and antioxidant activity, revealing another dimension of a practice passed down through generations.”
Do'o Jaggega Jabba
Chicken, pappaya leaf, chilli
Papaya leaf gives this Garo chicken dish its deep green colour and distinctive bitter edge, while chilli brings warmth to each mouthful. The savoury chicken and leafy coating pair beautifully with rice, with crisp cucumber and fresh carrot adding a refreshing contrast. Served on a banana-leaf-lined plate, it is a dish for curious appetites and those who enjoy exploring flavours beyond the familiar.

Na·tok at the Garo Table
Fish steamed or grilled, prepared and cooked in banana leaf
Fish is a staple of Garo cooking and appears regularly on our menu for guests who enjoy it. We prepare it in several ways, offering different flavours throughout your stay. One preparation wraps the fish in banana leaf, allowing it to cook gently in its own juices until tender. Opening the parcel releases the warm aromas, ready to enjoy with locally grown rice and seasonal vegetables.
At Didi’s Kitchen, ask what fish is cooking that day.
Tharing Curry
Taro curry with chilli, and spiced greens
Earthy taro takes centre stage in this comforting vegetable curry, becoming soft and creamy as it cooks. Its mellow flavour and satisfying texture make it a natural companion to rice, offering a gentler contrast to the bolder dishes on our table. Enjoy it as part of a shared meal, with our separate chilli condiment if you prefer a little extra warmth.

Do'o purra
Chicken, with a rice flower sauce chilli pappaya leaf
Chicken nestled in a thick rice-flour sauce, with papaya leaf bringing a distinctive bitter edge and chilli adding warmth. The sauce gathers the savoury flavour of the chicken, coating each piece and making a delicious accompaniment to rice. Served on banana leaf with crisp cucumber and fresh carrot, Do’o Purra is comforting, generous and full of Garo character.
A Sweet Finish
Sakin Gata

Soft, sweet rice cake layered with fragrant roasted sesame and steamed using banana leaves. Sakin Gata combines the gentle sweetness of rice with the deep, nutty flavour of sesame in a traditional Garo treat. Served beside fresh seasonal fruit, a small slice brings a satisfying finish to your meal.

Variety of seasonal fruits
We finish with a colourful selection of seasonal fruits, chosen for ripeness and flavour. The plate changes with the season, bringing fresh sweetness and a refreshing close to your Garo meal.
